Fried Rice

Beef or Ground Turkey Fried Rice

3 Scallions
2 garlic cloves
1/2 lb lean ground beef or ground turkey
1 tsp. chinese five spice
1 tsp. ginger
1/4 tsp. red pepper
10 oz. frozen mixed veggies
2 cups cooked brown rice
1 TB Soy sauce

cook ground beef or ground turkey. add scallions and garlic and cook until soft. add seasoning, and veggies. cook until veggies are tender. Add rice and soy sauce and cook until heated through.

1 1/4 cup serving = 4 WW points

This is a super easy recipe that can be cooked really fast if you cook your brown rice ahead of time. I usually double the recipe so we have leftovers for lunch.

Yum, looks so good. And we love edamame! I've never bought Chinese 5 spice....think it adds to the recipe enough to splurge for it?

Yes I think it adds a really good flavor. You could just borrow some from me!

yummy...i will try that! I have been focusing on my weight for the last 2 weeks and have lost seven pounds! I am going to be the "incredible shrinking woman" I have to do it. It makes you feel so good...I have more to lose but I will give it a whirl. ttl

Where do you buy your edamame in pods? The only place I can find it is Sams and I hardly ever go there.

I'll have to try this recipe on one of our "eat what Mommy likes" night.

Erin- I find the edamame in the pods at walmart in the frozen section. They come in Steamable bags.
